Small-Batch Refrigerator Pickle Chips

Ingredient Quantity Note
Pickling Cucumbers 1 lb (approx. 4-5) Sliced into 1/4-inch chips
Water 1 cup Filtered is best for clarity
White Vinegar (5%) 1 cup Provides the classic sharp "snap"
Pickling Salt 1 tbsp Use pickling/kosher salt (avoid table salt with iodine)
Sugar 1-2 tsp balances the sharp acidity
Pickling Spice 1-2 tbsp The Spice Alchemists blend
Fresh Garlic 2-3 cloves Smashed
Fresh Dill 3-4 sprigs Or 1 tbsp of dried dill seed

Instructions

  1. Prep the Brine: In a small saucepan, combine the water, vinegar, salt, and sugar. Bring to a simmer over medium heat, stirring until the salt and sugar are fully dissolved. Remove from heat and let it cool slightly (about 5–10 minutes).

  2. Pack the Jar: Place the garlic, fresh dill, and your pickling spice at the bottom of a clean quart-sized glass jar. Pack the cucumber chips tightly on top, leaving about 1/2 inch of headspace at the top of the jar.

  3. Submerge: Pour the warm brine over the cucumbers until they are completely covered. If the chips float, you can use a small weight or simply ensure the lid is tight.

  4. The Chill: Secure the lid and give the jar a gentle shake to distribute your spices. Let it sit on the counter until it reaches room temperature, then move it to the refrigerator.

  5. The Test: For chips, you can do a preliminary taste test after 24 hours, though the flavor will peak around the 48-hour mark.
