Golden Bird Chicken Dinner

Roasted Chicken, Crispy Potatoes & Steamed Broccoli

Some of the best dinners are also the simplest.

This Golden Bird Chicken Dinner combines juicy roasted chicken, crispy roasted potatoes, and perfectly cooked broccoli into a complete meal that's easy enough for a weeknight and satisfying enough for Sunday dinner.

Ingredients

For the Chicken

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp Golden Bird Rub
  • Lemon wedges for serving

For the Potatoes

  • 1½ lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp Root Veggie Roasting Blend

For the Broccoli

  • 1 large head broccoli, cut into florets
  • Salt and pepper to taste

Step 1: Prepare the Chicken

Preheat your oven to 425°F.

Pat the chicken thighs dry with paper towels.

Place in a large bowl and drizzle with olive oil.

Sprinkle with Golden Bird Rub and toss until evenly coated.

Arrange chicken skin-side up on a baking sheet or oven-safe skillet.

Step 2: Prepare the Potatoes

In a separate bowl, toss the potatoes with olive oil and Root Veggie Roasting Blend.

Spread in a single layer on a baking sheet.

For maximum crispiness, make sure the potatoes are not overcrowded.

Step 3: Roast

Place both the chicken and potatoes in the oven.

Roast for 35–40 minutes, or until:

  • Chicken reaches an internal temperature of 165°F

  • Skin is golden and crisp

  • Potatoes are browned and tender

If needed, remove the potatoes a few minutes early and continue cooking the chicken until fully done.

Step 4: Steam the Broccoli

During the last 5–7 minutes of cooking, steam the broccoli until bright green and tender-crisp.

Season simply with salt and pepper.

Sometimes the simplest vegetables are the perfect complement to a flavorful main dish.

Step 5: Serve

Allow the chicken to rest for 5 minutes before serving.

Plate with roasted potatoes and broccoli.

Finish the chicken with a squeeze of fresh lemon juice for a bright, fresh finish.

Variations

Whole Roaster Chicken

Substitute a 4–5 lb whole chicken.

Season generously with Golden Bird Rub and roast at 425°F for approximately 70–90 minutes, or until the thickest part of the thigh reaches 165°F.

Grilled Chicken

Use boneless chicken thighs or breasts and grill over medium-high heat until fully cooked.
