Golden Bird Roast Chicken with Pan Gravy & Roasted Veggies

Paired with a rich pan gravy and roasted veggies seasoned with our Veggie Roasting Blend, this meal is sure to become a family favorite.

Golden Bird Roast Chicken with Pan Gravy

Serves 4-6

Ingredients

  • 1 whole chicken (about 4 lbs)

  • 2-3 tbsp The Spice Alchemists Golden Bird Rub

  • 3 tbsp unsalted butter, divided

  • 1/4 cup all-purpose flour

  • 2-3 cups chicken stock

  • Salt (optional, to taste)

Instructions

  1. Prep the Chicken: Preheat your oven to 350°F. Pat the chicken dry with paper towels. Generously coat the chicken (inside and out) with Golden Bird Rub. Place the chicken in a roasting pan or oven-safe skillet.

  2. Add Butter: Dot the chicken with 2 tbsp of butter, placing small pats on top of the skin.

  3. Roast: Bake the chicken for about 2 hours, or until the internal temperature reaches 165°F. (Pro tip: Baste the chicken with pan drippings halfway through for extra flavor and moisture!)

  4. Rest the Chicken: Once cooked, remove the chicken from the oven and transfer it to a cutting board. Tent it loosely with foil and let it rest for 15-20 minutes.

  5. Make the Pan Gravy: While the chicken rests, place the roasting pan on the stovetop over medium heat. Add 2 tbsp of butter and 1/4 cup of flour to the pan drippings. Whisk constantly for 1-2 minutes to create a roux.

  6. Deglaze and Thicken: Slowly pour in 2-3 cups of chicken stock, whisking to scrape up any browned bits from the bottom of the pan. Continue whisking until the gravy thickens to your desired consistency. Season with salt if needed.


Roasted Vegetables with Veggie Roasting Blend

Serves 4-6

Ingredients

  • 4 cups mixed vegetables (carrots, potatoes, Brussels sprouts, etc.), chopped into even pieces

  • 2 tbsp olive oil

  • 1-2 tbsp The Spice Alchemists Veggie Roasting Blend

Instructions

  1. Prep the Veggies: Preheat the oven to 400°F. Toss the chopped vegetables with olive oil and Veggie Roasting Blend until evenly coated.

  2. Roast: Spread the vegetables in a single layer on a baking sheet. Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.


Serve and Enjoy!
