Tomato-Onion Umami Jam

A rich, savory finishing touch for your Burger Brilliance Bistro Burgers.

Sweet caramelized onions, slow-simmered tomatoes, and a touch of Burger Brilliance come together to create a deeply flavorful burger topping you’ll want to use on everything.

Ingredients

  • 1 large yellow onion, halved and thinly sliced

  • 1 cup diced tomatoes (fresh or high-quality canned, drained)

  • 1 tsp Burger Brilliance

  • 1–2 tsp brown sugar

  • 1 tsp Worcestershire sauce

  • 2 tbsp water (as needed for deglazing)

  • 1 tbsp olive oil or butter

  • Pinch of salt

Directions

  1. Heat olive oil or butter in a skillet over medium-low heat.

  2. Add sliced onions and a pinch of salt. Cook low and slow, stirring occasionally, for 10–12 minutes until softened and golden.

  3. Stir in diced tomatoes, brown sugar, Worcestershire sauce, and Burger Brilliance.

  4. Add water to deglaze the pan, scraping up any browned bits.

  5. Simmer for 5 - 7 minutes, stirring occasionally, until the mixture thickens into a rich, jam-like consistency.

  6. Spoon generously onto burgers, sandwiches, or grilled meats.

Alchemist’s Note

This jam can be made ahead and stored in the refrigerator for up to 5 days, if it lasts that long.
