Ingredients
For the Chicken
- 1½–2 lbs chicken breast or thighs, cut into chunks
- 3 tbsp Grecian Alchemy
- ¼ cup olive oil
- 3 tbsp lemon juice
- 1 tbsp red wine vinegar
- 2 garlic cloves, minced
For the Cucumber Tomato Salad
- 1 cup cucumber, diced
- 1 cup tomato, diced
- 1 shallot, thinly sliced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Pinch of salt
For the Feta Sauce
- 1 cup crumbled feta cheese
- ¼ cup sour cream
- Zest of 1 lemon
- Water as needed
For Serving
- Pita bread
- Hummus
- Fresh dill (optional)
- Lemon wedges
Step 1: Marinate the Chicken
In a medium bowl, whisk together:
- Grecian Alchemy
- Olive oil
- Lemon juice
- Red wine vinegar
- Garlic
Add the chicken and toss until evenly coated.
Cover and refrigerate for at least 30 minutes. For even more flavor, marinate for up to 4 hours.
Step 2: Prepare the Cucumber Tomato Salad
Place the sliced shallots in a bowl of ice water and allow them to soak for 10 minutes.
This simple step removes much of their sharp bite while keeping them crisp and fresh.
Drain the shallots and combine with:
- Cucumber
- Tomato
- Dill
- Lemon juice
- Olive oil
- Salt
Toss gently and refrigerate until ready to serve.
Step 3: Make the Feta Sauce
In a bowl, combine:
- Feta cheese
- Sour cream
- Lemon zest
Mash together with a fork until mostly smooth.
Add a splash of water at a time until the mixture reaches a creamy, drizzleable consistency.
Step 4: Cook the Chicken
For Kabobs
Thread the chicken onto skewers.
Grill over medium-high heat for approximately 10–12 minutes, turning occasionally, until cooked through and lightly charred.
For Oven Roasting
Spread the chicken on a parchment-lined baking sheet.
Roast at 425°F for 18–22 minutes or until the internal temperature reaches 165°F.
Step 5: Build the Wraps
Warm the pita bread.
Spread a generous layer of hummus onto each pita.
Top with:
- Grilled chicken
- Cucumber tomato salad
- Feta sauce
Finish with fresh dill and a squeeze of lemon juice if desired.
Serve immediately.
